Ingredients
  

  • 2 tablespoon butter
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 500 grams mushrooms sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoon fresh parsley chopped
  • 1 tablespoon lemon juice

Instructions
 

  • Heat the butter and olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until translucent.
  • Stir in the sliced mushrooms, salt, and black pepper, cooking until mushrooms are tender.
  • Sprinkle the flour over the mushrooms and stir well to combine.
  • Gradually add the vegetable broth, stirring continuously to avoid lumps.
  • Bring the soup to a gentle boil and then reduce the heat to simmer for 15 minutes.
  • Remove the pot from heat and blend the soup until smooth using a blender or immersion blender.
  • Return the pot to low heat and stir in the heavy cream.
  • Add the chopped parsley and lemon juice, stirring to combine.
  • Taste and adjust seasoning if necessary before serving.

Notes

For a richer flavor, consider using a variety of mushrooms such as cremini, shiitake, or portobello. Ensure the mushrooms are well-cooked to enhance their natural umami flavor. If you prefer a chunkier texture, only blend half of the soup and mix it back with the unblended portion. Serve the soup with crusty bread for a complete and satisfying meal.
