Ingredients
  

  • 1/2 cup Arborio rice
  • 4 cups whole milk
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup raisins optional

Instructions
 

  • Rinse the Arborio rice under cold water and drain.
  • In a medium saucepan, combine rice, milk, sugar, and salt.
  • Place the saucepan over medium heat and stir gently with a wooden spoon.
  • Bring the mixture to a gentle simmer, stirring frequently to prevent sticking.
  • Reduce the heat to low and continue to simmer for about 30 minutes, stirring occasionally.
  • Once the rice is tender and the mixture is creamy, remove the saucepan from heat.
  • Stir in the vanilla extract and ground cinnamon.
  • If desired, fold in the raisins to the pudding.
  • Allow the pudding to rest for 10 minutes to thicken slightly before serving.

Notes

To achieve the perfect creamy texture, ensure you keep the heat low and stir often to prevent the rice from sticking to the bottom of the pan. You can adjust the sweetness by adding more or less sugar according to your taste, and feel free to experiment with other add-ins like nutmeg or cardamom for different flavor profiles.
