Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes (15 oz)
  • 1 can black beans drained and rinsed
  • 1 can corn kernels drained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic, sauté until the onion is translucent.
  • Add ground beef to the pot and cook until browned.
  • Stir in taco seasoning and mix well with the beef.
  • Add diced tomatoes, black beans, corn, and chicken broth to the pot.
  • Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in heavy cream and shredded cheddar cheese until the cheese melts.
  • Season with salt and black pepper to taste.
  • Remove from heat and let rest for 5 minutes.
  • Garnish with fresh cilantro before serving.

Notes

For a richer flavor, consider cooking the soup a day in advance to allow the flavors to meld. You can also adjust the level of spiciness by using a hotter taco seasoning or adding some chopped jalapeños. If you prefer a thicker soup, reduce the amount of chicken broth slightly or add a tablespoon of cornstarch mixed with water towards the end of the cooking process.
