Ingredients
  

  • 8 ounces bowtie pasta
  • 1 pound ground beef
  • 1 cup diced onion
  • 1 teaspoon minced garlic
  • 1 can 10 ounces diced tomatoes with green chilies
  • 1/2 cup beef broth
  • 8 ounces Velveeta cheese cubed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

  • Boil water in a large pot and cook the bowtie pasta according to package instructions.
  • Drain the pasta using a colander and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add diced onion and minced garlic to the skillet and sauté until the onion is translucent.
  • Add ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon.
  • Drain excess fat from the skillet.
  • Stir in the diced tomatoes with green chilies and beef broth.
  • Add the cubed Velveeta cheese, stirring until fully melted.
  • Season with salt and black pepper, mixing well.
  • Add the cooked pasta to the skillet and stir to combine.
  • Let the mixture simmer for 2-3 minutes.
  • Remove from heat and let rest for 5 minutes before serving.

Notes

For an extra kick, consider adding a pinch of cayenne pepper or red pepper flakes when seasoning. To ensure the pasta is perfectly cooked, taste it a minute before the end of its cooking time to check for doneness. If you prefer a thinner sauce, add a bit more beef broth.
