Ingredients
  

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 cup onion diced
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup Parmesan cheese grated
  • 2 cups spinach roughly chopped
  • 1 tablespoon fresh basil chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the ground chicken to the pot and cook until browned.
  • Add onion and garlic to the pot and sauté until the onion is translucent.
  • Stir in Italian seasoning, salt, and pepper.
  • Pour in the chicken broth and bring to a simmer.
  • Add lasagna noodles to the pot and cook until al dente.
  • Stir in heavy cream, ricotta cheese, and Parmesan cheese until well combined.
  • Add chopped spinach and allow it to wilt.
  • Remove from heat and let the soup rest for 5 minutes.
  • Top with fresh basil before serving.

Notes

For a richer flavor, consider browning the chicken thoroughly to add depth to the soup. If you prefer a thicker consistency, you can slightly reduce the amount of chicken broth or add more ricotta cheese. Adjust the seasoning according to your taste, and feel free to incorporate additional herbs like oregano or thyme for extra aroma.
