Ingredients
  

  • 3 pounds chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 4 carrots peeled and cut into chunks
  • 4 potatoes peeled and quartered

Instructions
 

  • Season the chuck roast with salt, black pepper, garlic powder, and onion powder.
  • Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned.
  • Place the seared roast into the crockpot.
  • Pour the beef broth and Worcestershire sauce over the roast.
  • Add sliced onion, minced garlic, carrots, and potatoes around the roast in the crockpot.
  • Cover the crockpot and cook on low for 8 hours or until the meat is tender.
  • Once cooked, remove the roast and vegetables from the crockpot and let them rest for 10 minutes before serving.

Notes

For a richer flavor, you can marinate the roast overnight with the spices and Worcestershire sauce. If you prefer a thicker gravy, remove the liquid from the crockpot after cooking, pour it into a saucepan, and simmer it with a cornstarch slurry until it thickens to your liking. Always taste the dish before serving and adjust the seasoning as needed for the best result.
