Ingredients
  

  • 1 medium head cabbage chopped
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes (14.5 ounces)
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil

Instructions
 

  • Place the chopped cabbage into the Crockpot.
  • Add sliced carrots and celery on top of the cabbage.
  • Add diced onion and minced garlic to the Crockpot.
  • Pour the can of diced tomatoes over the vegetables.
  • Add the vegetable broth to the Crockpot, ensuring all ingredients are submerged.
  • Sprinkle salt, black pepper, thyme, and basil over the mixture.
  • Stir gently to combine all ingredients together.
  • Cover the Crockpot with its lid and set it to cook on low for 6 hours.
  • After cooking, turn off the Crockpot and let the soup rest for 5 minutes before serving.
  • Serve hot and enjoy your hearty cabbage soup.

Notes

For best results, make sure to chop the vegetables into uniform sizes to ensure even cooking. You can adjust the spice level by adding red pepper flakes or a dash of hot sauce if you prefer a spicier soup. Additionally, feel free to add other vegetables like potatoes or bell peppers to enhance the flavor and nutritional value.
