Equipment

  • 1 CrockPot or slow cooker
  • 1 Knife
  • 1 Cutting board
  • 1 measuring cup
  • 1 Spoon
  • 1 Mixing bowl

Ingredients
  

  • 4 pieces Chicken breasts boneless and skinless
  • 2 tablespoons Olive oil
  • 1 Lemon juice and zest
  • 4 cloves Garlic minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Chicken broth
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh parsley chopped

Instructions
 

  • Place the chicken breasts in the bottom of the crockpot.
  • In a mixing bowl, combine olive oil, lemon juice and zest, garlic, oregano, thyme, salt, and pepper.
  • Pour the mixture over the chicken breasts.
  • Add chicken broth to the crockpot.
  • Cover the crockpot and cook on high for 4 hours.
  • Once cooked, add kalamata olives and feta cheese to the crockpot.
  • Stir gently to combine the ingredients.
  • Let the chicken rest for 5 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

For a more intense flavor, marinate the chicken in the olive oil and spice mixture for a few hours or overnight before cooking. Additionally, you can add vegetables such as bell peppers or artichokes to the crockpot for added texture and flavor. If the dish seems too liquidy after cooking, remove the chicken and reduce the sauce on the stovetop to thicken it before serving.
