Ingredients
  

  • 1 pound kielbasa sausage sliced
  • 4 cups chicken broth
  • 5 medium potatoes peeled and cubed
  • 1 cup heavy cream
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Slice the kielbasa sausage and chop the onion and garlic on the cutting board.
  • Peel and cube the potatoes.
  • In the crockpot, combine kielbasa, chicken broth, potatoes, onion, garlic, salt, pepper, and thyme.
  • Set the crockpot to low and cook for 6 hours.
  • After cooking, stir in the heavy cream and cheddar cheese until well combined.
  • Let the soup rest for 10 minutes to thicken.
  • Serve hot and garnish with chopped parsley.

Notes

For extra flavor, consider browning the kielbasa slices in a skillet before adding them to the crockpot. This will bring out a deeper flavor in the sausage and add a bit more richness to the soup. Adjust the seasoning to taste, and feel free to add other herbs or spices to suit your preference.
