  • 1 measuring cup

Ingredients
  

  • 4 units boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 5 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup Parmesan cheese grated
  • 2 cups fresh baby spinach

Instructions
 

  • Season the chicken breasts with salt, black pepper, and Italian seasoning.
  • Heat the olive oil in a skillet over medium-high heat.
  • Brown the chicken breasts on both sides for about 2-3 minutes per side.
  • Transfer the chicken to the CrockPot.
  • In a bowl, mix the heavy cream, chicken broth, minced garlic, and sun-dried tomatoes.
  • Pour the cream mixture over the chicken in the CrockPot.
  • Sprinkle Parmesan cheese on top.
  • Cover and cook on low for 4 hours.
  • Add the fresh baby spinach to the CrockPot 30 minutes before the cooking time is finished.
  • Let the dish rest for 5 minutes before serving.

Notes

For a richer flavor, consider using a mixture of half heavy cream and half coconut milk. Adding a splash of white wine to the cream mixture can enhance the taste. If you prefer thicker sauce, mix one tablespoon of cornstarch with two tablespoons of water and add it to the CrockPot in the last 30 minutes of cooking. Serve with crusty bread or over pasta to absorb the delicious sauce.
