Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 3 clove garlic minced
  • 2 medium carrots sliced
  • 2 stalk celery sliced
  • 2 medium potatoes diced
  • 1 cup green beans chopped
  • 1 zucchini sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cup baby spinach

Instructions
 

  • Heat olive oil in a skillet over medium heat and sauté onion and garlic until translucent.
  • Place the sautéed onion and garlic in the crockpot.
  • Add carrots, celery, potatoes, green beans, zucchini, and diced tomatoes to the crockpot.
  • Pour in the vegetable broth.
  • Stir in thyme, basil, salt, and black pepper.
  • Cover the crockpot and cook on low for 6 hours.
  • Add baby spinach to the crockpot in the last 30 minutes of cooking.
  • Stir the soup well before serving.

Notes

To enhance the flavor of your vegetable soup, consider adding a splash of lemon juice or a dash of hot sauce before serving. Additionally, if you prefer a thicker soup, you can blend a portion of the soup and return it to the pot. For a heartier meal, add cooked pasta or grains such as quinoa during the last hour of cooking.
