Ingredients
  

  • 1 cup lentils rinsed
  • 2 tablespoon olive oil
  • 1 onion chopped
  • 2 clove garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 can coconut milk 14 oz
  • 4 cup vegetable broth
  • 2 carrots sliced
  • 1 red bell pepper chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1/4 cup cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, garlic, and ginger to the pot and sauté until the onion is translucent.
  • Stir in curry powder and cumin, cooking until fragrant.
  • Add lentils, coconut milk, and vegetable broth to the pot.
  • Bring the mixture to a boil, then reduce heat to a simmer.
  • Add carrots and red bell pepper, cooking until lentils and vegetables are tender.
  • Season with salt and black pepper, stirring well.
  • Stir in lemon juice and let the soup rest for 5 minutes.
  • Garnish with chopped cilantro before serving.

Notes

For best results, ensure that the lentils are thoroughly rinsed before cooking to remove any debris, and adjust the seasoning based on personal preference. Consider adding a pinch of cayenne pepper for extra heat, and serve the soup with a side of naan or rice for a complete meal.
