Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons tomato paste
  • 1 can crushed tomatoes (28 ounces)
  • 4 cups beef broth
  • 8 ounces lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat and add the ground beef, cooking until browned.
  • Add diced onion and minced garlic to the pot and sauté until the onion is translucent.
  • Stir in oregano, basil, and red pepper flakes, cooking for about 1 minute until fragrant.
  • Mix in tomato paste and cook for another 2 minutes.
  • Pour in crushed tomatoes and beef broth, then bring to a simmer.
  • Add broken lasagna noodles to the pot and cook until the noodles are tender.
  • Season the soup with salt and pepper to taste.
  • Stir in ricotta cheese until well combined and heated through.
  • Ladle the soup into bowls and top each serving with mozzarella and Parmesan cheese.
  • Garnish with fresh basil leaves before serving.

Notes

For a richer flavor, consider cooking the soup a day ahead and reheating before serving, as this allows the flavors to meld beautifully. If you prefer a thicker soup, reduce the amount of beef broth slightly. Adjust the level of spiciness by varying the amount of red pepper flakes according to your taste.
