Ingredients
  

  • 500 grams Mascarpone cheese
  • 250 milliliters Heavy cream
  • 100 grams Powdered sugar
  • 300 grams Biscoff cookies
  • 100 milliliters Coffee brewed and cooled
  • 2 tablespoons Coffee liqueur
  • 1 teaspoon Vanilla extract
  • 50 grams Biscoff spread
  • Cocoa powder for dusting

Instructions
 

  • Add mascarpone cheese, powdered sugar, and vanilla extract into a mixing bowl.
  • Whisk the mixture until smooth and creamy.
  • In another bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the mascarpone mixture.
  • Mix brewed coffee with coffee liqueur in a shallow dish.
  • Dip each Biscoff cookie into the coffee mixture briefly, ensuring they are soaked but not soggy.
  • Arrange a layer of soaked Biscoff cookies at the bottom of the baking dish.
  • Spread half of the mascarpone mixture over the cookies evenly.
  • Repeat the soaking and layering with the remaining cookies and mascarpone mixture.
  • Warm Biscoff spread slightly to make it pourable and drizzle over the top layer.
  • Cover the dish and refrigerate for at least 4 hours to allow it to set.
  • Before serving, dust the top with cocoa powder.

Notes

For a stronger coffee flavor, adjust the amount of coffee liqueur to personal preference. Additionally, ensure the mascarpone cheese is at room temperature before mixing to achieve a smoother texture. The dessert is best prepared a day in advance to enhance the flavors.
