Ingredients
  

  • 1 medium head cabbage chopped
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 2 large carrots sliced
  • 2 stalks celery sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, and sauté until onion is translucent.
  • Stir in carrots and celery, cooking for 5 minutes.
  • Add chopped cabbage and cook until it begins to soften.
  • Pour in vegetable broth and diced tomatoes, stirring to combine.
  • Season with salt, pepper, thyme, and basil.
  • Bring the mixture to a boil, then reduce heat to simmer.
  • Cover and simmer for 20 minutes or until vegetables are tender.
  • Remove from heat and let the soup rest for 5 minutes before serving.

Notes

For a richer flavor, consider using homemade vegetable broth, and feel free to adjust the seasoning to your taste. Adding a splash of lemon juice or apple cider vinegar at the end can also enhance the flavor profile of the soup.
