Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, beat the eggs and then mix in the oil and vanilla extract.
  • Gradually combine the wet ingredients with the dry ingredients until well incorporated.
  • Fold in the grated carrots and walnuts if using.
  • Pour the batter into a greased 9x13 inch baking pan.
  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before serving.

Notes

For best results, make sure the carrots are finely grated to ensure they blend well into the cake batter. If you prefer a richer flavor, consider adding a teaspoon of grated orange zest to the mixture. Always make sure your eggs are at room temperature before starting the recipe, as this helps the cake to rise more evenly.
