Ingredients
  

  • 4 cups potatoes cubed
  • 1 cup onions diced
  • 2 cups chicken broth
  • 2 cups milk
  • 2 cups cheddar cheese shredded
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup green onions chopped

Instructions
 

  • Melt butter in a large pot over medium heat.
  • Add diced onions and sauté until translucent.
  • Add cubed potatoes and chicken broth to the pot.
  • Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in milk and shredded cheddar cheese.
  • Whisk until the cheese is fully melted and the soup is creamy.
  • Season with salt and black pepper to taste.
  • Simmer for an additional 5 minutes.
  • Remove the pot from heat and let the soup rest for 5 minutes.
  • Ladle the soup into bowls and garnish with chopped green onions.

Notes

For best results, ensure that the potatoes are cut into even cubes for consistent cooking. If you desire a thicker soup, consider mashing some of the potatoes in the pot before adding the cheese. Adjust the seasoning to your preference and feel free to add a pinch of cayenne pepper for a little extra heat.
