  • 1 Ladle
  • 1 Knife
  • 1 Cutting board
  • 1 measuring cup
  • 1 Wooden spoon

Ingredients
  

  • 4 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 3 cups chicken broth
  • 1 cup milk
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped chives optional

Instructions
 

  • Melt butter in a large pot over medium heat.
  • Add chopped onion and sauté until translucent.
  • Stir in diced potatoes and cook for 5 minutes.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 15 minutes.
  • Mash some of the potatoes in the pot to thicken the soup.
  • Stir in milk and cook until heated through.
  • Add salt, black pepper, and sour cream, stirring until well combined.
  • Remove from heat and let the soup rest for 5 minutes.
  • Ladle into bowls and garnish with chives if desired.

Notes

For a creamier texture, use an immersion blender to partially blend the soup before adding the milk. Adjust the seasoning according to your taste and feel free to add extra toppings like shredded cheese or bacon bits for added flavor.
