Ingredients
  

  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a loaf pan with cooking spray or butter.
  • In a large mixing bowl, whisk together the pumpkin puree, eggs, vegetable oil, granulated sugar, and brown sugar until well combined.
  • In another bowl, mix the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for 10 minutes.
  • Transfer the bread to a cooling rack to cool completely before slicing.

Notes

It's important not to overmix the batter once you combine the wet and dry ingredients, as this can cause the bread to be dense. For a moist loaf, make sure your pumpkin puree is smooth and not too watery. Feel free to add nuts or chocolate chips to the batter for additional texture and flavor.
