Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 2 clove garlic minced
  • 2 medium carrots sliced
  • 2 stalk celery sliced
  • 1 medium zucchini diced
  • 1 cup green beans trimmed and cut
  • 1 can diced tomatoes 14.5 ounces
  • 4 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cup spinach leaves
  • 1 tablespoon lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute.
  • Add sliced carrots, celery, zucchini, and green beans to the pot.
  • Pour in diced tomatoes and vegetable broth.
  • Stir in dried thyme, dried basil, salt, and black pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  • Add spinach leaves and cook until wilted, about 2 minutes.
  • Stir in lemon juice and remove the pot from heat.
  • Let the soup rest for 10 minutes before serving.

Notes

For extra flavor, consider adding a bay leaf to the soup while it simmers, and remove it before serving. You can also customize this soup by adding other seasonal vegetables or beans for added protein. Adjust the seasoning to your taste and garnish with fresh herbs like parsley or cilantro for an added burst of freshness.
