Ingredients
  

  • 4 slices bread
  • 2 large eggs boiled
  • 2 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chives chopped
  • 1/2 cup lettuce shredded

Instructions
 

  • Boil the eggs until hard-boiled, about 10 minutes, and let them cool.
  • Peel the eggs and chop them into small pieces in a mixing bowl.
  • Add mayonnaise, mustard, salt, and black pepper to the eggs, mixing well.
  • Stir in the chopped chives.
  • If desired, toast the bread slices until golden.
  • Spread the egg mixture evenly onto two slices of bread.
  • Add a layer of shredded lettuce on top of the egg mixture.
  • Top with the remaining slices of bread to form sandwiches.
  • Cut the sandwiches in half diagonally and serve immediately.

Notes

For the best egg mayo sandwich, ensure your eggs are thoroughly cooled before chopping to prevent the mayonnaise from becoming oily. Toasting the bread adds a delightful crunch, but skipping this step keeps the sandwich softer.
