Ingredients
  

  • 2 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 cup eggnog
  • 2 large eggs
  • 2 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking pan.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract.
  • In a medium mixing bowl, whisk together the flour, baking powder, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the eggnog.
  • Mix until just combined, being careful not to overmix.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 20 minutes before slicing and serving.

Notes

For best results, use full-fat eggnog to ensure the cake is moist and flavorful. You can also sprinkle a little extra nutmeg on top of the batter before baking for an added touch of spice. If you like a sweeter finish, consider glazing the cake with an eggnog icing once it has cooled.
