Ingredients
  

  • 8 ounce cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon rum extract
  • 1/2 teaspoon nutmeg
  • 1 large egg
  • 2 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar for rolling

Instructions
 

  • In a mixing bowl, beat the softened cream cheese and butter together until smooth.
  • Add granulated sugar, vanilla extract, rum extract, and nutmeg, then mix until well combined.
  • Beat in the egg until fully incorporated.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add the dry ingredients to the cream cheese mixture, mixing until just combined.
  • Cover the dough and refrigerate for at least 30 minutes.
  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop tablespoon-sized balls of dough, roll them in powdered sugar, and place on the prepared baking sheet.
  • Bake for 10 minutes or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chilling the dough is crucial for achieving the gooey texture these cookies are known for, so don't skip this step. Additionally, make sure your butter and cream cheese are fully softened for easier mixing, which will result in a smoother, more uniform dough. If you prefer a stronger eggnog flavor, you can increase the nutmeg slightly or add a pinch of cinnamon.
