Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 cup eggnog
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Line a muffin tin with muffin liners.
  • In a mixing bowl, whisk together flour, sugar, baking powder, salt, and nutmeg.
  • In another bowl, combine eggnog, melted butter, vanilla extract, and eggs.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Divide the batter evenly among the muffin cups in the prepared tin.
  • Bake for 18-20 minutes until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool in the tin for 5 minutes before transferring to a cooling rack.
  • Let muffins cool completely on the rack for an additional 5 minutes.

Notes

Ensure not to overmix the batter as it can lead to dense muffins. If you prefer a stronger spice flavor, you can increase the nutmeg or add a pinch of cloves. For additional festive flair, sprinkle a little powdered sugar or a cinnamon-sugar mix on top of the muffins before serving. Adjust the cooking time slightly if using a dark or nonstick muffin tin as they may cook faster.
