Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1 cup eggnog
  • 1 large egg
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and nutmeg.
  • In a separate bowl, combine the eggnog, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and whisk until just combined; do not overmix.
  • Heat a non-stick skillet over medium heat.
  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook for another 2-3 minutes until golden brown.
  • Remove from skillet and let the pancakes rest for 5 minutes before serving.

Notes

For best results, ensure the skillet is properly heated before adding the batter to achieve evenly cooked pancakes. If you prefer a stronger flavor, add a pinch more nutmeg to the batter. Serve with warm maple syrup or a dusting of powdered sugar for a delightful holiday breakfast.
