Ingredients
  

  • 1/3 cup small pearl tapioca
  • 2 1/2 cups eggnog
  • 1/4 cup granulated sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg

Instructions
 

  • Soak the tapioca in water for 30 minutes, then drain.
  • Combine soaked tapioca, eggnog, sugar, and salt in a medium saucepan.
  • Cook over medium heat while stirring constantly until the mixture starts to thicken, about 15 minutes.
  • Continue to cook and stir for another 10 minutes until the tapioca becomes translucent.
  • Remove from heat and stir in the vanilla extract and ground nutmeg.
  • Transfer the pudding into a large mixing bowl and let it cool for 15 minutes.
  • Spoon the pudding into individual serving bowls.
  • Chill in the refrigerator for at least 2 hours before serving.

Notes

For a smoother pudding, ensure that the tapioca is soaked thoroughly and stirred consistently while cooking to prevent sticking or burning. Adjust the sweetness to taste by adding more sugar if desired, and feel free to garnish with a sprinkle of cinnamon or additional nutmeg before serving for extra flavor.
