Ingredients
  

  • 1 cup unsalted butter softened
  • 2/3 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup eggnog
  • 1/4 cup powdered sugar
  • 1/4 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • In a mixing bowl, cream together the butter and granulated sugar using an electric mixer until light and fluffy.
  • Add the egg yolks and vanilla extract to the butter mixture and mix until well combined.
  • Gradually add the flour, salt, and nutmeg to the wet ingredients, mixing until a dough forms.
  • Shape the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  • Using your thumb or the back of a wooden spoon, press an indentation into the center of each ball.
  • Bake the cookies for 10-12 minutes or until the edges are lightly golden.
  • Remove the cookies from the oven and allow them to cool on a cooling rack for 30 minutes.
  • In a small saucepan, gently heat the eggnog over low heat until warm but not boiling.
  • Gradually whisk the powdered sugar and cinnamon into the warm eggnog until smooth.
  • Spoon the eggnog mixture into the indentation of each cooled cookie.
  • Let the cookies sit for an additional 10 minutes for the filling to set.

Notes

For best results, ensure that the butter is properly softened to achieve a smooth and cohesive dough. You can adjust the amount of nutmeg according to your taste preference for a more pronounced holiday flavor. Make sure to fill the thumbprint indentation with the eggnog mixture only after the cookies have cooled completely to prevent it from melting or running.
