Feta and Tomato Pasta

Ingredients
  

  • 200 grams block feta cheese
  • 400 grams cherry tomatoes
  • 3 tablespoon olive oil
  • 300 grams pasta of choice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat your oven to 200°C (400°F).
  • Place the block of feta cheese in the center of a baking dish.
  • Surround the feta with cherry tomatoes.
  • Drizzle olive oil over the feta and tomatoes.
  • Sprinkle minced garlic, oregano, red pepper flakes, salt, and pepper over the top.
  • Bake in the preheated oven for 25-30 minutes until the tomatoes burst and the feta is golden brown.
  • Meanwhile, cook the pasta in a large pot of salted boiling water according to package instructions.
  • Drain the pasta using a colander and set aside.
  • Once the feta and tomatoes are done, remove the baking dish from the oven and give the mixture a good stir with a wooden spoon.
  • Add the cooked pasta to the baking dish and mix until well combined.
  • Let the pasta rest for 5 minutes to allow the flavors to meld together.
  • Garnish with fresh basil leaves before serving.

Notes

For added flavor, consider incorporating other herbs such as thyme or rosemary. You can also add a splash of balsamic vinegar after baking for a tangy twist. If you prefer a creamier sauce, add a splash of pasta water before mixing everything together. Adjust the level of red pepper flakes to suit your spice preference.
