Ingredients
  

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup feta cheese crumbled
  • 1/4 cup spinach chopped
  • 1/4 cup red bell pepper diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil for greasing

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease the muffin tin with olive oil.
  • In a mixing bowl, whisk together the eggs and milk until well combined.
  • Add the feta cheese, spinach, red bell pepper, salt, and black pepper to the egg mixture and stir.
  • Pour the egg mixture evenly into the prepared muffin tin.
  • Place the muffin tin in the preheated oven and bake for 25 minutes or until the egg bites are set.
  • Remove from the oven and let them rest for 5 minutes before serving.

Notes

To ensure your egg bites have a fluffy texture, do not overmix the eggs. Feel free to customize with other ingredients like mushrooms or onions for added flavor. Reheat leftovers in the microwave or oven for a quick breakfast option.
