Ingredients
  

  • 4 medium potatoes peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 cup feta cheese crumbled
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the diced potatoes in a mixing bowl.
  • Drizzle olive oil over the potatoes and toss to coat.
  • Season the potatoes with salt, pepper, and oregano.
  • Spread the seasoned potatoes evenly on the baking sheet.
  • Bake in the preheated oven for 40-45 minutes or until golden brown and tender.
  • Remove the potatoes from the oven and let them rest for 5 minutes.
  • Transfer the potatoes to a serving dish.
  • Sprinkle the crumbled feta cheese over the potatoes.
  • Drizzle lemon juice over the feta-topped potatoes.
  • Garnish with fresh parsley before serving.

Notes

For best results, ensure the potatoes are evenly coated with olive oil and spices before baking. Using fresh feta cheese will enhance the flavor of the dish. Adjust the amount of lemon juice to taste, and consider adding a pinch of red pepper flakes for an extra kick if desired.
