Ingredients
  

  • 4 slices whole grain bread
  • 100 grams feta cheese crumbled
  • 1 tablespoon olive oil
  • 1 medium tomato sliced
  • 1/2 cucumber sliced
  • 1/4 red onion thinly sliced
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

  • Place the slices of whole grain bread on a clean surface.
  • In a mixing bowl, combine the crumbled feta cheese and olive oil.
  • Spread the feta mixture evenly over two slices of bread.
  • Layer the tomato slices, cucumber slices, and red onion slices on top of the feta mixture.
  • Sprinkle the chopped parsley over the vegetables.
  • Season with salt and pepper to taste.
  • Top with the remaining slices of bread to form sandwiches.
  • Cut each sandwich in half and serve immediately.

Notes

For an enhanced flavor, try toasting the bread slightly before assembling the sandwich to give it a nice crunch. If you prefer a creamier texture, add a bit of Greek yogurt to the feta mixture. This sandwich is versatile and can be customized with additional ingredients like olives or roasted peppers based on your preference.
