Ingredients
  

  • 1 large spaghetti squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Drizzle the insides with olive oil and season with salt and black pepper.
  • Place the squash halves cut-side down on a baking sheet.
  • Bake in the preheated oven for 35-40 minutes until the flesh is tender.
  • Remove from the oven and let it cool for about 5 minutes.
  • Use a fork to scrape the flesh of the squash into spaghetti-like strands.
  • Transfer the spaghetti squash strands to a mixing bowl.
  • Add crumbled feta cheese, chopped parsley, lemon juice, and minced garlic to the bowl.
  • Toss everything together until well combined.
  • Serve warm and enjoy.

Notes

For the best flavor, ensure the spaghetti squash is tender before scraping it into strands, and feel free to adjust the seasoning to your taste. You can also add other herbs or spices to customize the dish to your liking.
