Ingredients
  

  • 2 cup corn kernels fresh or frozen
  • 1 cup cheddar cheese shredded
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño seeded and diced

Instructions
 

  • Heat the skillet over medium heat and add the corn kernels.
  • Cook the corn for about 5-7 minutes until they start to char slightly.
  • In a mixing bowl, combine the cooked corn, cheddar cheese, sour cream, and mayonnaise.
  • Add the red onion, cilantro, lime juice, chili powder, salt, and black pepper to the mixture.
  • Stir all the ingredients together until well combined.
  • Gently fold in the diced jalapeño.
  • Transfer the dip to a serving dish and let it rest for 5 minutes.
  • Serve with tortilla chips or your favorite dippers.

Notes

For best results, use fresh corn if available for a sweeter taste. Adjust the amount of jalapeño according to your heat preference. The dip can be made a few hours in advance and stored in the refrigerator, allowing the flavors to meld together for a more robust taste.
