Filipino Banana Lumpia

  • 1 Cutting board
  • 1 Mixing bowl
  • 1 plate
  • 1 Frying pan
  • 1 pair of tongs
  • 1 slotted spoon
  • 1 paper towel

Ingredients
  

  • 4 pieces ripe bananas
  • 8 pieces spring roll wrappers
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1 cup cooking oil
  • 1/4 cup water

Instructions
 

  • Peel the bananas and slice them in half lengthwise.
  • Mix the brown sugar and ground cinnamon in a bowl.
  • Lay a spring roll wrapper on a flat surface and place a banana half on it.
  • Sprinkle a tablespoon of the sugar mixture over the banana.
  • Fold the sides of the wrapper over the banana and roll it tightly.
  • Dip your fingers in water and seal the edges of the wrapper.
  • Repeat the process with the remaining bananas and wrappers.
  • Heat the cooking oil in a frying pan over medium heat.
  • Fry the lumpia in batches until golden brown, about 2-3 minutes per side.
  • Remove the lumpia with a slotted spoon and place on a paper towel-lined plate.
  • Let the lumpia rest for 5 minutes before serving.

Notes

For best results, ensure the bananas are ripe but firm to avoid them becoming too mushy during frying. Adjust the sweetness by varying the amount of sugar mixture to taste. Keep an eye on the frying process as the lumpia can brown quickly. Serve warm for the best flavor and texture.
