Ingredients
  

  • 500 grams fish fillets boneless and skinless
  • 1 liter fish stock
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 2 potatoes peeled and cubed
  • 1 can diced tomatoes 400 grams
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1 bay leaf
  • 2 tablespoons parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent.
  • Stir in minced garlic and cook for 1 minute.
  • Add diced carrots, celery, and potatoes, and cook for 5 minutes.
  • Pour in fish stock and bring to a boil.
  • Add diced tomatoes, salt, black pepper, thyme, oregano, and bay leaf.
  • Reduce heat and let simmer for 15 minutes.
  • Add fish fillets to the pot and cook until fish is opaque and flakes easily, about 10 minutes.
  • Remove bay leaf from the soup.
  • Stir in chopped parsley and let the soup rest for 5 minutes before serving.

Notes

For the best flavor, use fresh fish and high-quality fish stock. Feel free to adjust the seasonings to your taste, and consider using a mix of different fish types for a more complex flavor profile. If you prefer a spicier soup, add a pinch of chili flakes while sautéing the onion.
