Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup chocolate chips optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter and sugar until light and fluffy using an electric mixer.
  • Add the pumpkin puree, egg, and vanilla extract to the creamed mixture and mix until combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the chocolate chips if using.
  • Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10 minutes or until the edges are lightly golden.
  • Remove from the oven and let the cookies rest on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.

Notes

For best results, ensure that your butter is at room temperature to achieve a light and fluffy texture in the cookies. If you prefer a spicier cookie, you can add a little extra cinnamon or nutmeg to taste. Additionally, you can substitute chocolate chips with nuts or dried cranberries for a different flavor profile.
