Ingredients
  

  • 2 pounds beef chuck cut into 2-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 4 carrots sliced
  • 4 potatoes peeled and cubed
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large Dutch oven over medium-high heat.
  • Brown the beef cubes in batches, then remove and set aside.
  • In the same pot, add onion and garlic, sautéing until soft.
  • Stir in tomato paste and flour, cooking for 1 minute.
  • Pour in beef broth and red wine, scraping up any browned bits.
  • Return beef to the pot and add Worcestershire sauce, thyme, and bay leaves.
  • Bring the stew to a simmer, cover, and cook for 1.5 hours.
  • Add carrots and potatoes, then cook for an additional 30 minutes until tender.
  • Season with salt and pepper to taste before serving.
  • Let the stew rest for 10 minutes before serving.

Notes

For best results, use a good quality red wine that you would enjoy drinking, as it will significantly impact the flavor of the stew. Additionally, allow the stew to rest for a few minutes after cooking to let the flavors meld together, enhancing the dish's overall taste.
