Ingredients
  

  • 1 cup lentils rinsed
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 1 teaspoon thyme dried
  • 1 bay leaf
  • 6 cups vegetable broth
  • 1 can diced tomatoes 14.5 oz
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion, carrots, and celery, and sauté until the vegetables are softened, about 5 minutes.
  • Stir in the minced garlic, dried thyme, and bay leaf, and cook for an additional minute.
  • Add the rinsed lentils to the pot and stir to combine with the vegetables and spices.
  • Pour in the vegetable broth and diced tomatoes; bring the mixture to a boil.
  • Reduce the heat to low, cover, and let the soup simmer until the lentils are tender, about 30 minutes.
  • Remove the bay leaf and season the soup with salt and black pepper to taste.
  • Stir in the chopped parsley and let the soup rest for 10 minutes before serving.

Notes

For added depth of flavor, consider sautéing the vegetables until they are slightly caramelized. If you prefer a thicker soup, use an immersion blender to partially blend the soup before adding the parsley. Additionally, this soup can be made a day in advance and will taste even better as the flavors meld together overnight.
