Ingredients
  

  • 2 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 3 large yellow onions thinly sliced
  • 1 teaspoon kosher salt divided
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup dry white wine optional
  • 1 cup sour cream full-fat
  • 1 cup mayonnaise full-fat
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika optional
  • 1 tablespoon fresh chives finely optional; minced

Instructions
 

  • Melt the butter with the olive oil in the large skillet over medium heat.
  • Add the sliced onions and 1/2 teaspoon of the kosher salt, then stir to coat evenly in the fat.
  • Cook the onions over medium heat, stirring every few minutes, until they begin to soften and turn translucent, about 8–10 minutes.
  • Sprinkle the sugar over the onions and continue to cook, stirring occasionally, until deeply golden and caramelized, about 12–15 minutes more.
  • Deglaze the pan with the white wine (if using), scraping up browned bits, and cook until almost completely reduced, about 2–3 minutes.
  • Season the onions with the remaining 1/2 teaspoon kosher salt and the black pepper, then remove the skillet from the heat and let the onions cool to room temperature.
  • In the mixing bowl, whisk together the sour cream, mayonnaise, Worcestershire sauce, garlic powder, onion powder, and smoked paprika until smooth.
  • Roughly chop the cooled caramelized onions and add them to the bowl with the sour cream mixture.
  • Stir until the onions are evenly distributed and the dip is well combined.
  • Taste and adjust seasoning with additional salt and pepper if needed.
  • Transfer the dip to an airtight container or serving bowl, cover, and refrigerate for at least 1 hour to chill and allow flavors to meld.
  • Garnish with minced fresh chives just before serving, if desired, and serve with potato chips, crackers, or fresh vegetables.

Notes

For the best flavor, take time to fully caramelize the onions to a deep golden brown without burning, keeping the heat at medium to medium-low and stirring just often enough to prevent sticking. Using full-fat sour cream and mayonnaise gives the richest, creamiest texture, but you can swap part of the sour cream for Greek yogurt for a tangier, lighter version. The dip tastes better after several hours or overnight in the refrigerator as the flavors blend, and it will thicken slightly as it chills, so you can thin it with a spoonful of milk or cream if needed before serving. Leftovers keep well for 3–4 days in the fridge, and the caramelized onions themselves can be made ahead and frozen so you can whip up this dip quickly for last-minute gatherings.
