Ingredients
  

  • 2 tablespoon olive oil
  • 4 large onions thinly sliced
  • 3 clove garlic minced
  • 1 tablespoon all-purpose flour
  • 8 cup beef broth
  • 1 cup white wine
  • 1 tablespoon fresh thyme chopped
  • 1 bay leaf
  • 1 package gnocchi 16 ounces
  • 1 cup Gruyere cheese shredded
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sliced onions and cook until caramelized, about 20 minutes.
  • Stir in minced garlic and cook for an additional 1 minute.
  • Sprinkle flour over the onions and stir to combine.
  • Gradually add beef broth, stirring constantly to prevent lumps.
  • Pour in white wine and bring the mixture to a simmer.
  • Add fresh thyme, bay leaf, salt, and pepper to taste.
  • Simmer the soup for 15 minutes to enhance the flavors.
  • Remove the bay leaf and add gnocchi to the pot.
  • Cook gnocchi until they float to the top, about 3-5 minutes.
  • Stir in Gruyere cheese until melted and well combined.
  • Let the soup rest for 10 minutes before serving to allow flavors to meld.

Notes

For a richer flavor, you can use a mix of beef and chicken broth. Ensure the onions are well caramelized to bring out their sweetness, which is essential for an authentic French onion taste. Using good quality Gruyere cheese will enhance the creamy texture and flavor of the soup. If you prefer a vegetarian version, substitute the beef broth with vegetable broth and omit the cheese or use a plant-based cheese alternative.
