French Onion Soup Rice

Equipment

  • 1 Rice cooker or pot with lid

Ingredients
  

  • 2 tablespoon olive oil
  • 2 large onions thinly sliced
  • 1 teaspoon sugar
  • 1 cup white rice
  • 2 cup beef broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup grated Gruyere cheese

Instructions
 

  • Heat olive oil in a large saucepan over medium heat.
  • Add sliced onions and sugar, stirring occasionally until onions are caramelized, about 15 minutes.
  • Add rice to the pan and cook for 2 minutes, stirring to coat the rice with the onion mixture.
  • Pour in the beef broth, and add salt, pepper, and thyme, then stir well.
  • Bring the mixture to a boil, then reduce heat to low and cover the saucepan.
  • Simmer until rice is cooked and liquid is absorbed, about 18-20 minutes.
  • Remove from heat and let it rest for 5 minutes with the lid on.
  • Fluff the rice with a fork and stir in grated Gruyere cheese.
  • Serve immediately, garnished with additional fresh thyme if desired.

Notes

For a deeper flavor, consider adding a splash of white wine while cooking the onions. If you prefer a creamier texture, stir in a tablespoon of butter before adding the cheese. Adjust seasoning to taste, and remember that the Gruyere cheese will add additional saltiness to the dish.
