Ingredients
  

  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup white chocolate shaved

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, whisk together the melted butter and granulated sugar until smooth.
  • Add the eggs and vanilla extract to the bowl and whisk until fully combined.
  • Sift in the cocoa powder, flour, salt, and baking powder, and gently fold the mixture using a spatula until just combined.
  • Grease the mini muffin tin or line with paper liners.
  • Spoon the batter evenly into the mini muffin tin, filling each cup about three-quarters full.
  • Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Remove the brownie bites from the oven and transfer them to a cooling rack.
  • Allow the brownie bites to cool for at least 30 minutes.
  • Once cooled, use a cheese grater or microplane to shave the white chocolate over the top of each brownie bite.

Notes

For an extra fudgy texture, be careful not to overbake the brownies; they should still be soft in the center when removed from the oven. You can experiment with different types of chocolate shavings, such as dark or milk chocolate, for a varied flavor profile. Additionally, adding a pinch of espresso powder to the batter can enhance the chocolate flavor.
