Ingredients
  

  • 1 cup mashed sweet potato
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup pitted cherries chopped
  • 1/2 cup dark chocolate chips

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a mixing bowl, combine mashed sweet potato, cocoa powder, and almond flour.
  • Stir in maple syrup, melted coconut oil, and vanilla extract until well combined.
  • Add baking soda and salt to the batter and mix thoroughly.
  • Fold in chopped cherries and dark chocolate chips.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the brownies to rest for 10 minutes before slicing and serving.

Notes

For optimal results, ensure the sweet potatoes are well mashed and free of lumps before adding to the batter. Using fresh cherries can enhance the flavor, but if they are unavailable, dried cherries can be used as a substitute. Be careful not to overbake the brownies to maintain their fudgy texture.
