Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can garbanzo beans 15 ounces, drained and rinsed
  • 4 cups vegetable broth
  • 1 can diced tomatoes 14 ounces
  • 1 cup spinach leaves
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.
  • Stir in the ground cumin, smoked paprika, and cayenne pepper, cooking for 1 minute.
  • Add the garbanzo beans, vegetable broth, and diced tomatoes to the pot.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
  • Stir in the spinach leaves and continue to cook until wilted.
  • Season the soup with salt and pepper to taste.
  • Remove the pot from the heat and stir in the lemon juice.
  • Allow the soup to rest for 10 minutes before serving.
  • Ladle the soup into bowls and garnish with chopped fresh parsley.

Notes

For a creamier texture, you can blend a portion of the soup and mix it back in. Adjust the seasoning to your preference, adding more spices for a stronger flavor. If you want to add more protein, consider adding cooked chicken or tofu. Serve with crusty bread for a complete meal.
