Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 6 cloves garlic minced
  • 4 cups vegetable broth
  • 4 large potatoes peeled and diced
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté for 5 minutes until translucent.
  • Stir in the minced garlic and cook for another 2 minutes.
  • Pour in the vegetable broth and bring to a boil.
  • Add the diced potatoes, salt, pepper, and thyme, and reduce the heat to a simmer.
  • Cook for 20 minutes or until the potatoes are tender.
  • Use a wooden spoon to slightly mash some of the potatoes for a thicker consistency.
  • Stir in the heavy cream and cook for an additional 5 minutes.
  • Remove from heat and let the soup rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

For the best flavor, use fresh garlic and high-quality vegetable broth. Adjust the thickness of the soup by mashing more or fewer potatoes to your preference. If you like a bit of spice, consider adding a pinch of cayenne pepper or red pepper flakes. Serve with crusty bread for a complete meal experience.
