  • 1 Cutting board
  • 1 Wooden spoon

Ingredients
  

  • 8 cloves garlic peeled and sliced
  • 2 tablespoons olive oil
  • 1 onion diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves
  • 1 baguette sliced
  • 1/2 cup grated Parmesan cheese

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sliced garlic and diced onion to the pot and sauté until fragrant and golden.
  • Pour in the vegetable broth and bring to a boil.
  • Reduce heat and let the soup simmer for 20 minutes.
  • Blend the soup until smooth using a blender.
  • Return the soup to the pot and stir in the heavy cream.
  • Season with salt, black pepper, and fresh thyme leaves.
  • Simmer for an additional 5 minutes.
  • Toast baguette slices in the oven until crispy.
  • Serve the soup hot, garnished with toasted baguette slices and grated Parmesan cheese.

Notes

For a richer flavor, use roasted garlic instead of raw garlic. You can also add a pinch of nutmeg for a hint of warmth. Make sure to taste and adjust the seasoning as needed before serving. If you prefer a thicker consistency, reduce the amount of broth or let the soup simmer longer to allow it to thicken naturally.
