Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter softened
  • 1/4 cup brown sugar packed
  • 1/4 cup molasses
  • 1 egg
  • 1/2 cup buttermilk

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Line a cupcake pan with 12 cupcake liners.
  • In a mixing bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  • In another bowl, cream together the butter and brown sugar until light and fluffy.
  • Add the molasses and egg to the butter mixture and mix until combined.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, and mix until smooth.
  • Divide the batter evenly among the cupcake liners.
  • Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool in the pan for 5 minutes before transferring them to a cooling rack to cool completely.

Notes

Ensure all ingredients are at room temperature before starting to achieve a better texture. Don't overmix the batter to avoid dense cupcakes. For added flavor, consider topping the cooled cupcakes with a cream cheese frosting or a sprinkle of powdered sugar.
