Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1/2 cup molasses
  • 1/4 cup espresso cooled
  • 1/4 cup milk

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a 9-inch round cake pan and set aside.
  • In a mixing bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  • In a separate bowl, cream together the butter and brown sugar until light and fluffy.
  • Beat the egg into the butter mixture.
  • Mix in the molasses and espresso until well combined.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until smooth.
  • Pour the batter into the prepared cake pan.
  • Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the cake cool in the pan for 10 minutes.
  • Turn the cake out onto a cooling rack and let it cool completely before serving.

Notes

For best results, ensure that all ingredients are at room temperature before starting. When measuring the flour, be sure to spoon it into the measuring cup and level it off with a knife to avoid packing in too much. This will help maintain the cake’s light texture. Optionally, you can dust the cake with powdered sugar or serve it with a dollop of whipped cream for added flavor.
