Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/2 cup molasses
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 large egg

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease the loaf pan with butter.
  • In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add the molasses and egg to the butter mixture and whisk until well combined.
  • Stir in the buttermilk until the mixture is smooth.
  • In another bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring with the rubber spatula until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top with the spatula.
  • Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the loaf rest in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Make sure to use room temperature ingredients for the best texture. If you don't have buttermilk, you can substitute it with a mixture of 1 cup milk and 1 tablespoon of lemon juice or vinegar, letting it sit for 5 minutes before using. Be careful not to overmix the batter to ensure a tender crumb. Adjust the spices to your taste preference, and consider adding a pinch of nutmeg for an extra depth of flavor.
