Notes

For best gluten free results, double-check that your hot sauce, ranch dressing, and any pre-shredded cheeses are certified gluten free, since some brands may contain additives with gluten. Using freshly cooked chicken (such as rotisserie chicken verified gluten free or poached chicken breasts) improves both flavor and texture; avoid overly watery chicken so the dip stays thick and creamy. You can adjust the heat by adding more or less hot sauce, or stir in a bit of blue cheese for a sharper, more traditional buffalo flavor. This dip can be assembled ahead, covered, and refrigerated for up to a day, then baked just before serving; if baking from cold, add a few extra minutes to the cook time until fully heated through.
